FRESH FOOD


Quality: from Farm to Fork

Whenever visiting any Metro distribution center, customers always get a strong impression of its fresh foodstuff products, including fresh fish, meat, and especially fruit and vegetable, because of their diversity, and good quality.

Another advantage of fresh food in Metro is cold chain control – that means temperature control in whole supply chain. Correct temperature controls are imperative to keep fresh foods in their original form till their shelf life.

For this purpose, we maintain cold condition for fresh foods, from transportation, storage to display for selling. The temperature are controlled and verified by suitable equipments helping us to ensure cold condition whole the chain.


DRY FOOD

Beside fresh foodstuff products, dry food department comprises rice, canned goods, beverages, sweets, confectionery, edible grocery as well as detergents and toiletries…which is also another strong points of Metro C&C.

Separate areas have been designated for every kinds of goods so they are always maintained in good condition and also comforted of customers. Each lines has instructions board so customers feel easy for view and choice.

The purchase’s process and quality control are always attached. Especially for foodstuffs, shelf-life, label and direction information are considered by Metro team.




NON-FOOD

We only select companies and products that fulfill basic quality requirements as defined and recognized by METRO.
Product quality, durability, and professionalism are the main driving force of our business. Moreover, we commit to provide good after-sales services to our customers.



HACCP

In order to ensure the food safety in our store, Metro implemented  the HACCP method.
HACCP stands for Hazard Analysis and Critical Control Point, which is a system to ensure food safety and maintain hygienic standards. HACCP has become the internationally recognized and accepted method for food safety assurance for thirty year. In Metro we have applied HACCP by:

  • Identify hazards and determine how they occur
  • Take preventive measures
  • Implement daily controls
  • Take steps to combat potential and existing hazards
  • Check that the HACCP plan is effective
  • Set up records to document occurrences of hazards
  • Classify and record this information

   

However, in Metro, HACCP is not a stand-alone program, but is built upon a foundation of operational practices called prerequisite programs. The success of a HACCP program is dependent upon both facilities and people. In Metro, we ensure these prerequisite programs developed and maintained:

  • Good manufacture practice (GMP): Standard Operating Procedures (SOPs) are set up to guide our employees how to carry out their job.
  • Premise and equipment are designed to facilitate safe food preparation
  • Quality of using water is strictly controlled
  • Cleaning and sanitation program is carried out with  consultancy of professional chemical provider
  • Pest control by bio-products
  • Equipments calibration and maintenance
  • Product identification & Traceability
  • Product recall
  • Personnel hygiene and employee health 
  • Training employees according to regulation and job requirement
  • Approved suppliers

HACCP are strict legal regulations in many countries in which Metro operates. Therefore we ensure that all of  Metro’s staff  know it, observe it and promote it.



REQUIREMENT FOR SUPPLIERS

Metro have basic requirements for our suppliers, to ensure that supplied products meet requirements of regulation, Metro and our customers.

For fresh products, the suppliers and their products are required to adapt product specification as defined by Metro. It includes requirements of quality, packaging and transportation temperature. Metro team will check all deliveries, and the products which are not met the demand will be rejected.

For whole processed foods and cosmetic, the quality documents are requested. We request the suppliers to submit the quality declaration document of the products, including sample of label and test result. Other products such as measuring equipments or helmet are provided with certificate of registration as defined by regulation.

Labeling of pre-packed products is another important demand for Metro’s suppliers. We request all pre-packed products have to comply with regulation for labeling. It ensures to provide our customers all necessary information about the products.

Periodically, Quality Assurance Department take the samples for checking. We have engaged independent and highly reputable laboratories for testing food and nonfood items. Quality Assurance Department also make labeling and quantitative checking of all items to find out non-confirming products and ask the suppliers to improve product quality.
